 To heat crystallized honey, use a warm water bath (double boiler)  with water around 95-110°F  for slow, gentle heating  and stirring between to  prevent overheating and preserve quality; avoid boiling the water or using extremely high heat to protect its flavor and beneficial enzymes.  Remember your honey stays good a long time.

It all depends on mother nature and the nectar flow.  Around the first of July is a good guess and sometimes we get a fall flow depending on the weather.
